1/2 cup grapeseed oil
1 egg
1/2 cup soy milk (or regular milk)
1 tsp. vanilla
1 cup persimmon puree (2-3 ripe persimmons)
1 cup sugar
1 cup spelt flour (or other)
1/2 tsp salt
2 tsp. baking soda
1 tsp baking powder
1 tsp cinnamon
Preheat oven to 375F.
Grease and flour a cake pan.
Mix together the first four wet ingredients.
Make the persimmon puree.
Put ripe pulp into blender or hand mixer.
Blend until smooth. Add to wet mixture.
Sift all dry ingrediants together.
Slowly combine dry mixture with wet mixture.
Pour into cake pan.
Bake for approx. 40 minutes or until toothpick
inserted into middle of cake comes out clean.
