The New York Times discovers “Salute Santé’s lovely verjus”

Food scribe Florence Fabricant calls its light and tangy flavor

Brand-new Salute Santé! ® Verjus by Food & Vine™, Inc. of Napa scored a hit at the 52nd Fancy Food Show in New York City. In her review of the show published July 12, 2006 New York Times food writer Florence Fabricant praised Salute Santé! ® Verjus, calling it “blessed relief” from “an abundance of olive oils and balsamic vinegars.”

 

Verjus – the unfermented “green juice” of wine grapes harvested in midsummer – has a light and tangy flavor that makes it the perfect partner for grapeseed oil.

Dressings made with Salute Santé! ® Verjus can be paired with fine wines, unlike vinaigrettes that can cause wine to “turn” on the palate.

Fabricant told Food & Vine™, Inc., founders Nanette and Valentin Humer that she also serves friends a nonalcoholic cocktail made with verjus and club soda.
